Stissing House is a restaurant in Pine Plains, currently characterized as a "country tavern".[1] Clare de Boer owns and operates Stissing House. Previously, a French restaurant, also called Stissing House, operated in the space occupied by de Boer's restaurant. With such a busy career in the city, Ms. de Boer had imagined a solo restaurant in the Hudson Valley more as a project for retirement. (She and her husband, Luke Sherwin, own a house in Dover Plains, about 20 miles away.) But when she heard that the French restaurant occupying the Pine Plains building — also named Stissing House — would close at the start of last year, she decided to look at the space.

“It’s cute until you sign the dotted line,” she said on a recent Friday in the sitting room, formerly a wood shed, of her tavern in this Hudson Valley town. The walls of the 6,000-square-foot space were still being painted. A conventional oven hadn’t yet been installed, and the pastry chef, Suzanne Nelson, was getting worried. In the nineties, Christian Eisenbeiss acquired the property to save it from the wrecking ball. He enlisted partner Dale Mitchell, a master sawyer, and together they embarked on a two year renovation.

A plate of simple brown bread and butter is the first thing you’ll get here. The bread itself is soft with an air of sourdough tang—save a few chunks for soaking up the various fatty sauces you’ll want to lap up from your plate like a barn cat. They’re very generous with the cloud-soft butter here, and it’s fun to watch servers scoop schmears of it from a butter mountain that looks like an abstract foam sculpture you’d see at MoMa. At Stissing House, you’ll walk by a mountain of butter under a glass cloche when you pass by the open kitchen. It functionally doesn’t really do much, but it’ll set the tone for the evening as you’re making your way through the 18th-century tavern in Pine Plains. The food at this American restaurant isn’t exactly breaking new ground, but details like the dozens of Ebenezer Scrooge-esque candlesticks on every flat surface and multiple fireplaces will make you slow down and remember that you’re not in the Big City anymore.

There are carefully chosen small plates, starters, and entrées. Start off with coal-roasted Belon or Fin de la Baie oysters, malt vinegar potato chips, and house made smoked ham and pickles. Share a salad, like an endive and pear with buttermilk dressing, frisée and lentil with a pheasant egg, or frilled spring greens with vinaigrette, and tear apart wood-fired bread with asparagus and goat’s curd.

On a cold winter night we’ve had a rabbit and tarragon pot pie topped with flaky pastry, but we’ve also seen a brothy fish pie. The flaky pastry gets a nice dusting of tiny pyramids of salt, and it’s super satisfying to take the first thwack with your spoon against it before you split it with your emergency contact, or even just the bestie who’s outlasted your decade-long situationship. This is tavern food at its absolute best, and we wouldn’t be surprised if the broth just happened to be the cure for, well, anything.

I did notice also an absence of seeds inside (another reason these are some of the best in town). Made with three eggs and served with home-style potatoes and choice of toast or flour tortilla. Topped with bacon, avocado, green chile, cheddar cheese and mushrooms. Grilled, bacon-wrapped all beef frank, topped with pinto beans, onions, cheddar cheese and Andele’s famous chile con queso. The Green Enchilada, on the other hand, was one of my favorite items here. It was spicy like the red side, and went well with their unique enchiladas with the melted cheese.

Breaded fish filet served with coleslaw, roasted corn & red pepper medley and french fries. Three eggs scrambled with chopped jalapeños, onions and tomatoes. This Chile Relleno had an excellent non-greasy batter and was served with no sauce on top (although you can get sauce at an extra cost). I like these rellenos very much, but they were just not as spicy as they could be.

Wife got fish tacos, and I got 1/2 chicken, and we shared. Also on the “Mexican” side of the menu is the Mexican Hot Dog which is loaded with condiments including a pickle and pinto beans, wrapped with bacon, and has a smoky flavor.

They have a separate gluten-free menu so be sure to ask for it. I don’t think the queso is on the gluten-free menu, but the last time I was there, I asked about the ingredients and it turned out that I was able to eat it. Three eggs scrambled with bell peppers and sausage.

On a previous visit to the regular Andele Restaurant I had what I believed to be its specialty–tacos al carbon. The other part of the menu, though, is New Mexican cuisine including local style enchiladas and chile rellenos. Tender slices of flame-broiled pork, beef or chicken on a sandwich roll baked especially for Andele. Piled high with lettuce, tomato, onion and cheese. 1 Rolled enchilada (green), 1 chile relleno, 1 beef flauta, green chile con carne with potatoes, beans and rice.

However, the melted cheese here is very unique and I did like the chile flavor, so the enchiladas are now on my rotation if I can come to Las Cruces often enough to try different restaurants. I do think the green ones are better though (they either have no cumin or very little so that I did not really taste it in the green chile).
